Is it safe to eat the same thing everyday in terms of muscle health or do you need to shock them occasionally with new food?

Well, Satan, if you eat the same thing too much, you can sometimes eventually develop an allergy to it. Also, it's very hard to get every vitamin and nutrient you want from just a couple foods, so you need to mix it up a bit to get a rounded diet.
But just purely for muscles, yes pretty much all they care about is protein and ATP.

Fish, fruit, eggs, veggies, beans, grains and cheese into a blender.
