You need sodium, but only in small amounts (about 500mg). Pretty much everyone eats way more salt than they need, which is detrimental to your health. Basically, if you eat any processed foods or add salt to your food you're already above the recommended daily allowance.

The explanation doesn't even make sense, because if someone eats deep fried potatos, there is no displacement of animal fats going on. They are simply eating deep fried rancid omega 6 oils.

But that's not what they're doing. They track the food intake and health outcomes of a large cohort over decades and show how certain foods corelate with certain health outcomes. The "theoretical displacement" is just speculation about why these oils scored so high despite being high in calories and low in nutrition.

Interesting but somewhat different from what I've found until now.
Even non-meat stuff is different, afaik there fruit and vegs max out at 2 cups of vegs and 1 of fruit, and nuts instead at a full oz, but you gotta have some variety.
Would you mind giving a source for that? I'd like to see how they figured out those numbers.

So it's a metanalysis, nothing new, and apparently they didn't combine fruit and vegs together, so they lost some information there (400g of fruit AND 400g of vegs IS a bit much).
Everything else looks legit, but they point out even they don't have enough data on some points: eggs, vegetable oils, poultry...
AND MOST IMPORTANTLY: the sum of all those intervention together, it's the most important data point but it will take decades to gather that.
Assuming it's going to be linear on the life expectancy is quite naive
