Depends what you mean by self-hosting. In your bedroom? Probably not ideal.
But you know, you can host "illegal" stuff just fine by taking a few precautions:
1. buy the servers or VPSes with properly mixed coins, even better if in a place that doesn't care about it, but if that can't be done (see for example, libgen recently had trouble with hosting their servers in ukraine, but seems it was probably mostly because libgen owners are russian).
2. buy various cheap VPSes that act as leafs
3, make the leafs proxy back to the server bought in 1
4. use a registrar that is unlikely to remove your site
That's it, but a lot of variation can be done here.
for example, if you don't care about clearnet, skip 2 to 4 and make an onion.
If you care about clearnet, some other options exist, for example VPNs that can do port forwarding (not many left) will work in place of step 2, for extra safety you can add other proxies when connecting to said VPN if you don't trust it (you shouldn't).
If speed isn't a concern you could even literally use tor to connect to it.
You can even host a site on even free shit like trycloudflare (even if MITM), and use a proxy/VPN or even tor to connect to the cloudflare endpoint, again staying anonymous.
Now could a glowie deanon you? Yes,if they cheat and can examine enough global traffic, that's why you need to make step 1 unlinkable to you (same for the rest).
If 4 gives you trouble, simply buy a lot of domains. Have fun playing at and mouse games. Or you can do an onion or i2p.
