The only difficult part of it that I can think of would be to make the recordings start when it detects a person, instead of any motion like a leaf blowing across the lawn.

I have a arduino nano breadboard hung up on my wall with a cable running down to a battery bank that stays plugged into a ups+battery for maximum uptime. I only turn it on when I leave, it has wifi, camera, motion detector, and flashlight.

motion detected? light turns on, starts taking 2 pictures per second. uploads them to private git repository

looking back at it, i should have just got a normal fucking ring camera with a battery backup like a normal human and just plug it in before i leave
