You have several options.
1. Disable the TPM and Secure Boot in BIOS.
2. Set the Group Policy to stick to your current version of Windows.
3. Reformat and install Windows 10 LTSC 2021 which doesn't get any kind of version updates and is supported until 2032.

Yeah, No. 2 would be the quickest, but also the least effective. MS could just ignore it at push the update anyway.
The first options would be most sure-fire way to avoid the notification. Just do a restart and go into your BIOS and turn off the TPM and Secure Boot. You can look for instructions with a youtube video for your motherboard model.
Installing LTSC would require a full clean installation of the OS, meaning you would need to make a backup of your files, documents and install all your apps again afterwards. This method would require the most work but also would be the best since Windows 10 Pro doesn't have support anymore while LTSC gets support until 2032. It would take you an hour at most. I triggered the bitlocker recovery recently when I wanted to demo a linux live usb to my dad on his win11 laptop cause he kept complaining about the AI garbage being shoved down his throat. I was unaware bitlocker was enabled by default nowadays and that booting a live usb would trigger it. Of course he didn't know the key and he didn't know what account he used to sign in.
Was a tense 30 minutes until I managed to deduce he used his gmail and then jump through the hoops of gaining access to the MS account on his phone, setting up the authenticator, etc.

What do you think happened when crowdstrike fucked up? Reverting the crowdstrike failure was the easy part, getting all those end users to type in the bitlocker key over phone support was the hard part

Being able to build out my whole distro on subtly different machines in one shot is a godly power of Nix based distros like NixOS and GuixSD. Playing this, "just mutably reconfigure your system bro."
