what's with people stealing phones in third world countries?
phones can be quite pricey I get that but what can you do with someone's phone? you can't sell it because you have no box, no papers, no charger etc, also it's easy to locate a stolen phone and someone might check the imei number and then the thief is fucked

Asking thirties but you have a polish flag why don't you ask yourself?

I heard that some druggies dismantle the phone and sell the hardware parts in exchange for crack

you most certainly can sell it. it gets immediately wiped and shipped off somewhere. you can try to locate it but find out it's in china somewhere

I understand that newer phones are harder to unlock so I don't know how they deal with that.

There's nothing they can do about it even if they track it down. Whatchu gonna do? Go to a thieves den and get stabbed? Report to the police? You're a nobody. They won't even entertain you unless you're a big shot. Getting robbed doesn't happen to the rich unless they get scammed, that's when the authorities do "raids". But to the regular Joe, it's learn from experience.

Most phones have one click tools to unlock them even iPhones, but the iCloud account is impossible to remove.

Depending on the country too it could be that they're stealing from tourists who will be out of the country soon and can't spend too long trying to track down their phone
