Why not just use "un-" for everything?

I assume people just started saying them like that because it sounds good, maybe they were all just i- at first. Like ir- only happens with words that start with R, irregular, irrational, irrelevant, and im- with words that start with P (I think)

Latin loanwords. Only un- comes from Old English.
