Raw milk is legal at least in my state so it doesn't even really matter. I'm pretty sure most countries in Europe mandate that all milk be pasteurized so I guess you could argue some conspiracy theory there but as you said it's just hearing the milk. You can do it at home.

Some nutrients and enzymes are removed with heat treating. There are people who are lactose intolerant who can still drink milk if they get it raw. Big companies that get a monopoly on milk also do some weird shit besides heat treating but I don't remember what it was. Anyways, even milk with less heat treatment and from eco farms with different cows etc have a vastly superior taste to regular store milk. Just a shame its not as available.
