Keep a record, and celebrate yourself when you have particularly good days where you notably undershoot your target. If that's difficult, start a little above that and drop it a little every week or two to give your body time to adjust.
Also, gaslight yourself into associating the feeling of hunger with progress/success.
This has worked multiple times for me
