I've only seen people make salad with them with onions and tomates, don't know if it's boiled or pickled though, they put it on tostadas mostly, you can eat it as a side with grilled meat and beans or something. It's got a tangy taste, so if you don't desperately want the fiber and the taste isn't for you then it's not worth it.
