The Torah literally means "the law"
In the Jewish religion you're supposed to follow "the law"
Ancient and medieval Jews realised that like any law code, it requires interpretation and there will be edge cases.
A good portion of the Talmud is a bunch of "lawyers" arguing back and forth about said edge cases. The thing is: sometimes they play devil's advocate for an extreme position only to then debunk it later. So it might go "rabbi Moshe said "you should kill gentiles" but actually it says to never oppress people" and then you can cut out the first part and pretend like that's the position of the book.

I'm simplyfying of course, sometimes it takes several paragraphs before they go "and that's wrong because..."

Anytime you see one of these quotes it's shit like that, or just straight up not from the Talmud.

Don't get me wrong, there's some sexist stuff in there, it's ambivalent towards slavery and so on, but it's nothing that you won't find in Christianity.
