it depends really. eritrean tigrays and tigres (same people no matter how much “tigres” insist) will make their coffee very much in an italian style. as far as i understand though, between Amhara, Tigray, Oromo, and Harari people in mainland Ethiopia there isn’t a whole lot of difference. i do know some rural Amhara villages will still roast fresh beans at home which is pretty kino and probably results in richer flavor
