given the context in any other universe could china survive the european interventions? not really, china always looked down on the mercantile class, chinese imperial government would not support any kind of resource extraction type of colonization the european engaged as china had surplus labor force to work the resources by hand, so yea the large poor workforce did have an oppressive force on industrialization

generally the plagues wiped out entire clusters of population, the effect is more of a power vacuum and recompaction as historians say, ie, looser feudal hierarchies because many steps in the feudal steps of the society just disappeared

so yes free cities and special feudal exceptions became more common and burgers had more power of negotiation but the peasants no little power, the peasant empowerment didn't happen until the french revolution

Chinese civil service exams should've expanded to other fields than just administration, like science and medicine. But scientific knowledge building should be a private sector thing so wealthy Chinese could've built private universities

science itself did not exist as a discipline and medicine was in the realm of mysticism, this is why all chinese discoveries were written in terms of daoism since it provided a comprehensive world view, and how natural phenomenon's all had daoist names
if china had no contact there is very little chance they would even try to relate medicine with empirical experiments

europe had the scientific revolution too so they cheated twice

"stem" wasn't a thing in the west either until the 16th century
imperial china was basically stuck that that stage

it really is the movable printer, people like to deny it but the speed and the spread of ideas is paramount in changing the dogma of power

sure china had mechanical printers but they couldn't print whatever they want it was a state industry and was closely watched, all kind of heretical materials were printed in the days of the movable press in europe, eventually things settled down but when lay people begin to read the bible all kinds of weird things happened

I was learning about the Shang dynasty the other day
they built by far the largest city in the world at the time, and the main purpose of it was human sacrifice on an industrial scale
this was before the mandate of heaven concept had really come into being, the Shang Kings were Shaman-Kings in a society mainly based around ancestor worship and the appeasement of ancestor and nature spirits, they used animal bones to divine the future and massive amounts of human(and animal) sacrifice to placate them

cool shit, but every country has interesting history and time periods so your post is kind of dumb from the get-go
