American states to me all seem like they have 1 or maybe 2 big cities if the state is big enough, surrounded by 500km of farmland in all directions

It's all like farmland and small towns. New Jersey is the most densely populated state and is basically the same thing except Suburbs instead of farmland.

This is only true for the States West of the Mississippi where the cities have expanded enormously because they developed in the 20th century with the car. They became huge and very spread out, with nothing in between them. But in the East, cities are smaller and more numerous.
