Just like every foreigner from his time, his idea of French cooking boiled down to the slop he was served by the successors of that conman Escoffier

I've had all of those things. They're alright, but that's more to do with how old the food is. Fruit picked fresh and thrown in fridge for 5 hours isn't really noticeably different (other than being cold.) Same deal with meat. Catch fish, kill it, throw it in an ice bucket and carry it back home, a couple hours of hiking. It's not any worse than cleaning it and cooking it right then and there. Having done both I prefer the former because cooking in nature fucking sucks, and I'm not eating raw freshwater fish.

As the OP says
>and like good plain cooking
which is antithetical with french cooking, they are obsessed with sauces.

I don't know what French food actually is. I've never seen a French restaurant here in all my life. I know some French pastries like croissants, macrons, etc. basics like that.

When I look up French food it mostly looks... the same as English food? Pot roasts and stews and mashed potatoes and shit like that, pic related.
I don't really care for this kind of food if I'm being honest. I'm sure the regional stuff has some interesting things (cuisse de grenouilles). French bros, what should I be looking for? I have an eastern mediterranean palate, so I like lots of aromatics and spices, lots of sour and acidic flavors.

Tbh no one really gives a shit about French food beyond pastries. The cooking methodologies and their codifications in the restaurant scene are far more influential and prevalent than the actual dishes themselves.

Which is why it’s always funny when they’re rated highly in terms of popularity on the world stage because beyond pastries and baked goods people really don’t even eat it.
