If its beef, pickle relish and chopped onion
If it's pork and properly spiced Currywurst Sauce (Ketchup, curry, paprika, onion etc)
If it's a "el cheapo" sausage bought at the supermarket, ketchup and mustard
If it's lamb, turkey, or any other kind of slop, I simpli don't eat it, I'd rather get to a dรถner/gyros and have something properly made.
