How come Italians don't try to establish a Catholic theocracy, blow themselves up or behead Protestants and claim that they are doing it, because the Brits broke their promise after WW1?

Italians destroyed their catholic theocracy for a republic and Spain's theocracy was crushed by the United States in 1898 and then made bitch by USSR in 1930. France's secularists won.

Well there definitely was some discontentment in the political arena and public opinion in the aftermath of the war, in fact one of the greatest intellectual figures of the beginning of the XX century (D'Annunzio) coined the notion of "vittoria mutilata" (mutilated victory) in order to describe the disappointment at the limited territorial gains.
In retrospect I would have to disagree with those people, since we received all Italian-speaking core lands (well except Nice lol) and we even got more, i.e. South Tyrol
