The way I see it, 'hearts' are how people form connections with one another, and since nobody is an island, Satori needs to read those connections to understand the meaning of the thoughts in your mind, otherwise it's like trying to understand an encrypted message, you might be able to pick up on patterns, but without the cypher, it's too abstract to understand. The character in question already struggled with connecting with people, but the trauma of losing his physical heart worsened his spiritual deficiency because he chose for it to happen and it involved permanently letting go of what few connections he did have, becoming heartless both in body and spirit. I wrote him for Okuu, who I think is sort of all heart, and I thought it was a good way to prevent Satori from just 'knowing' exactly what was going on in his head, although I think the whole point of Satori's power is that knowing what someone is thinking isn't enough, hence again, the heart.
Anyway, I don't see him as someone Satori would be romantically involved in. I think that when her fortune says "someone whose heart/mind she can't read?" it has to be someone whom she literally can't read the mind of. In that sense, I think an interesting idea would be for Satori to get with someone who has an Infohazard in their head, which when thought about by Youkai, it kills them. That way you preserve Satori's ability to read anyone's mind while having a partner with some nuance.
