Because they were there during the peak of Touhou, when there were a lot of eyes on the franchise, and thus being remembered by more people
Even if ZUN conceived the best character design to ever be made right now, the fact remain that there just not as many eye on the franchise anymore to look at said character and spread it around

it's the beginning of the series, as far as most people are concerned, and critically, it was the first game to really enjoy any larger amount of success. even more critically, that larger amount of success wasn't within a franchise-specific niche of a niche, because there wasn't a franchise yet. it being successful within the larger doujin PC software market is what made touhou what is now, because that allowed a community to grow up around it.

older? maybe. more well known? definitely not, every trope has earlier examples than the one that makes it a thing but they're only really recognized in retrospect after the trope gets properly established

As was said before, EoSD and Touhou as a whole wasn't anywhere near as popular in EoSD's day. The anime for Tsukiyomi was in 2004 and I'm sure a couple other things around the time came out before Touhou really took off. Even then it seemed like PCB was more popular at first, to me anyway, then EoSD started taking off probably from people coming in from Flan and Cirno memes. IN too was really popular in works. Anywho, Touhou's influence on vampires and loli vampires was definitely after known ones were established and vampires were pretty popular. It's about as likely as Touhou influencing the popularity of lolita fashion.
