Idea is simple.
What 2hu related things can be identified as the most, least, smallest, largest, first, last, etc... of a certain category?
It doesn't have to be canon. It doesn't have to be part of fiction. It can be anything 2hu related. Just has to be factual to a degree.
Examples being stuff like the first Touhou doujin album, semi-well known to be Stardust Reverie by Popkorn&HaraKara, on Comiket 64, 2003.
Cirno is the character with the largest amount of fanart, at least on Pixiv, with 124,000+ works, beating even Reimu herself by a relatively small margin.
A player named Rurolulu holds the highest amount of world records for Touhou, with 70... and it's all in one game, PoFV.
Yuuhei Satellite, as far as my info goes, has the most amount of Albums and Singles combined released for Touhou, with 51 albums and 34 singles. Not counting collab work. Note that I wouldn't be surprised if people like Maritumix or Someone45356 has made more arranges individually in total, but not albums.
The person that has created the most amount of Touhou animations is most likely the youtuber Ninoseyasunori, now numbering at 142, and counting, as he's still making more.
The character with the most amount of spellcards is Reimu, with 89 spellcards in total.
An obvious one would be the Touhou video with the most views, that being Bad Apple, currently at 108 million views.

Some other example questions (You) could answer:
Canon (Lore):
- Character that has appeared the most in a manga (probably Reimu, but need a count)
- Character that has appeared the least in a manga/game (separately if you want). Bonus points if its made relative to the amount of time the character has been shown since she's been introduced, as some newhu would be the most obvious answer here.
- The character that has canonically lost the most
- The character that has canonically won the most (probably Reimu?)
- Character with most relations to different characters (most likely Okina)
- Character duo that has fought each other the most on-screen

Canon Game:
- The most broken, non-bugged shottype in any game (counting bugged is probably MarisaB in MoF?)
- Longest Touhou game if everything is timed out, on Lunatic (Phantasmagoria games obviously won't count) (can separate mainline and decimal games)
- Touhou singular boss appearance with the most spellcards on Lunatic (basically only counting one appearance. Not adding up, say, Yuyuko's Spellcards on PCB + TD)
- The spellcard that spews the most amount of bullets in the series, if timed out. Yes, it's nigh impossible to answer, but it is an interesting question. My best guess is Fitful Nightmare, from Remilia in ISB.
- Longest Touhou Timeout Spellcard (this one I'm almost certain is Profound Danmaku Barrier ~Phantasm, Foam, and Shadow~, from PCB via Yukari, but need confirmation)

Doujinshi:
- Circle/Artist that has made the most doujins. Separate r18 and sfw works if you want.
- Character that is part of the most amount of doujins (likely impossible to properly know as most doujins don't get scanned)
- Character that is part of the most 18+ doujins (same problem with above)
- Oldest known doujinshi
- Once (or still) 2hu doujinshi Author that has had success the most in the manga industry (probably Bkub?)

- Oldest known fangame
- Most expensive-to-produce fangame (maybe Koumajou Densetsu 2, as it bankrupt the circle)
- Longest running fangame series
- Longest to beat Touhou fangame OR Touhou fangame with the most content (this one has a few contenders, like Touhou PDP even without the mods, Touhou Labyrinth 2, Gensou Shoujo Taisen Yume, etc)
- Non-Touhou game with the most Touhou mods
- Hardest Touhou fangame (hard to quantify)

Music:
- Person that has arranged or composed the most amount of tracks. I say person not circle, as someone could be part of multiple circles.
- Oldest known Touhou arrange (there are some ideas, like this https://web.archive.org/web/20011117221337/http://www16.big.or.jp/~zun/html/music.html, made in 2001)
- The longest Touhou arrange. I won't be surprised if it's the Touhou Opera piece made by Operadots that I archived years ago, being an hour and 20 minutes in length. Some orchestra could be construed as longer probably, but I don't know if they could count as one arrange.
- Music Circle that has had the most success in the music industry (maybe Unlucky Morpheus or Kishida Kyoudan. Love that both of them still make Touhou music once in a while, even after their success)
- Most and least arranged Touhou music piece

Fanart:
- Character with the most amount of fanart relative to low amount of r18 fanart. I think there's a graph about this (alongside the opposite), but I don't have it
- I'm afraid to even ask this, but character with the most amount of fanart... in relation to a specific fetish (ex. maybe Reimu has the most fanart related to Armpit fetish). Separate each fetish, of course.
- Character that has the most variation of Gyates
- Character drawn the most as a Yukkuri
- Character with the most amount of fanart that has high amount of bookmarks (lets go with at least 5000+) on Pixiv
- Series that has the most crossover fanart with Touhou
- Character with the least amount of fanart

Fan animation:
- Touhou fan anime that has sold the most. Probably impossible to neatly get the numbers on this one, but there might be some hints scattered around places.
- Touhou character... that has the most animated porn. Bonus points if we're not counting MMD dance videos.
- Longest Touhou animation. Probably a MMD movie somewhere.
- Video parodied the most by Touhou animation

Misc:
- The most popular confirmed Touhou fan, could be a celebrity or something
- Oldest known post on the internet about Touhou, good luck finding this one
- The most sold Touhou merch. If it's a fumo, the most sold Touhou fumo.
- Youtuber that has the most videos posted about Touhou. Quality doesn't matter, as long as it's Touhou related.
- Largest known Touhou event, that's NOT a convention. Something like a concert, maybe.

Again, could be about any superlative question, don't have to be stuck to these questions, but some examples to get the juices flowing.

The oldest known Touhou fan animation is this https://www.nicovideo.jp/watch/sm1483, made by Shiobi for Touhou Saimoe to support Yuyuko for the second Touhou Saimoe, in 2005. Yuyuko did not win, sadly.
The most popular meme is Touhou Yukkuri. So popular it has become that it has transcended the series itself, spawning as its own genre, with even random japanese grandmas and preschoolers knowing what it is, even if just by osmosis. You can find thousands of videos made with Yukkuris daily on Youtube, just search "ゆっくり".
Not counting endings, Reimu has technically appeared in more games than Marisa, with her appearing HRtP and Gold Rush but Reimu only didn't appear in GFW... but Gold Rush is most likely non-canon, so actually, Reimu and Marisa are tied in game appearances. Counting endings however, yes, Reimu does appear more than Marisa, as Reimu appears as a cameo in GFW.
Marisa, of course, is the icon of every mainline Touhou windows game, making her the character used most as the .exe icon. Surprisingly, she also appears as an icon for Shoot the Bullet, for some reason.
Marisa and Reimu are tied as the character with the most themes, both with eight.

The most popular OST in the 2hu is UN Owen was Her. It has won 1st 10 times since the inception of the Popularity Poll. Second place, not as far behind as some might think, is Septette for the Dead Princess, winning 1st 7 times. The last time UN Owen has lost 1st place was 2019.
Honorable Mention, the track that has won 1st the least in the popularity poll is Phantom Ensemble, winning once back in 2003. It and Yuyuko's Theme (won twice) are the only tracks that have won the poll that are not the Scarlet Sisters' themes.
More well known, the most popular character is Reimu, winning 1st 11 times in the popularity poll in total. 2nd is Marisa, pretty far behind with 4 wins.

Prizm Light Fragments, while old, is pretty far from the oldest arrange. Stardust Reverie, the oldest known entire ALBUM, is older than that by 4 months, as Prizm released on Dec 2003, while Stardust Reverie released on August 2003.
I also wouldn't count ZUN's own arranges, personally speaking. Really, this and stuff like questions of "oldest fanart" and "oldest fan animation" is more of a question of:

"When did phenomena of Touhou fan dedication start?"
Because, while NND is definitely the catapulting point for it, it started somewhere before that.

Toby Fox, almost certainly. He is upfront about how much Touhou inspired Undertale and Deltarune's fighting style. He's even linked up with ZUN at least a few times. Hundreds of thousands of people all over the world worship that man, I'd even argue it's more intense than ZUN worship because ZUN doesn't directly interact with the community through social media as much, and Undertale/Deltarune fans are younger and more impressionable in general

Another measure we can look for is oldest dedicated fan site. Can probably do western and eastern spheres. I found the listed copyright on the archive of the old Maidens of the Kaleidoscope domain is listed as 2006. That dates it to before Mountain of Faith.
