Is there a niche for a military jet that can casually go mach 5+ at 100k feet or would strategic level SAM systems just shoot it down anyway ?

Alternative recon in the event of the destruction of surveillance satellites, until new ones can be launched
Something with the SR-72s conceptual targeted performance would be pretty survivable against most SAMs anyway, and there's some advantages for being able to observe targets from the side instead of directly above (though IIRC satellites are sometimes used like this too).

Being able to get a warhead anywhere on earth fast is extremely useful for taking out HVTs or yeeting standoff weapons.
