What sort of unarmed self defense training do anons do? I found a local Muay Thai school that incorporates a lot of Dutch kickboxing techniques and drills. Iโ€™m curious to know what everyone else does.

Judo mostly. Did a bit of boxing in my teens/early-20s and I've dabbled in muay thai and bjj judo is what I've stuck with consistently, it's just more fun.

TQ: I got my blackbelt from a reputable master across nine years of training. These days I mostly just hike, do Tai Chi, occassional staff and sword, the San Chin and keep promising to dust off some of the training routines that I mostly remember (shuaijiao wrestling and san shou patterns).
Daily carry is a Beretta Nano because it's very concealable and still packs a +P+ punch.

Used to go to MMA practice 3-5 times per week with hard sparring each Sunday. Now I live somewhere that doesn't have a gym or many people to train with, so I just spar with the one dude in town who used to fight.

Wrestler in jr and High School. Boxing/Muay Thai for 3 years. Krav Maga, Kickboxing, Catch Wrestling for over 10 years. Black belt in Krav and coached Krav kickboxing and catch wrestling for 3 years.

Bag work and lifting. I'm 49. I have no desire to be in another fight and I haven't been in a fight in over 15 years, so I have no idea what the meta is these days. 20 years ago, if you could grapple you basically had a superpower in a 1v1, and if you could grapple and knew a bit of striking you ran the bar if shit went down. I'd expect that things are much more complicated these days, what with the greater availability of decent grappling schools. My nod to self defense today (besides basic physical fitness) is to wear hiking shoes with composite toes because I know firsthand how goddamned bad it hurts to get toe kicked with something like that. I also carry a gun on my walks but that's more for semi feral pitbulls than for people. People are easy to read and are thusly easy to deal with. Dogs concern me. Certain dog breeds, you don't know what the fuck they're thinking.
