1) search for "wild goose recipe". Wild is key. Wild birds are a lot leaner than domestic fowl, so the same recipes aren't always the best.
2) make really really sure you don't overcook the meat. Get an instant-read meat thermometer if you don't already have one. Reason is there is a very fine line between safely cooked and overcooked-and-tough-as-fuck. A thermometer removes the guesswork. Either that or go for slow-cooked recipes like stews or crock pot dishes--if you cook the meat a long time it will be tender too.
