Could you make a single-engine plane with an NK-12? Would that be cool?

Depends. Are you right behind the engine? I'd imagine with all that air blowing at you it would be pretty cool.

What would you use a single-engine aircraft for, which is slow but has the low-speed flight performance and power?

Sell them for civilian use and end private jets.

The vibration and noise of the propellers would likely be unpopular with private jet customers.

You could remanufacture them with improved quieting, scimitar blades, harmonic tuning etc.
The NK-12 is, after all, a 1950s design.

I'm pretty sure I've seen a Soviet aircraft with a massive contraprop engine up front. It won't have been one of those but it was very "in your face".

Sure but it would need landing gear so high to make the props clear the ground it would be a death trap on the ground.

>single engine
If you can avoid a counter prop you'll avoid it, the gearbox and vibrations (long shaft) are problematic and only justifiable for a huge swept wing aircraft

No, the F6F was simply better in any situation.
The F4U was in service for a longer tine because like the P-38 it was a "sick fighter" rushed into service. And compared to the F8F it was bigger, that defined its value during the early post war for a naval attacker (see Skyraider). The F6F could have been better in that role but its production line was closed to make room for the F8F.
