The parts of the performance that you don't see in your life are just the ones you are familiar with. You haven't realized what they are because you probably haven't experienced any other way of living. When you change your social gender, having to do a lot of things you never did really highlights the performance part well. You should check transmasc experiences to get an idea of what I'm talking about. Male performance is usually about the way you dress (wearing shirts and pants), the way you act among others (looking or not looking gay), what you do in your free time, typical know how associated with men (fixing stuff ...)
It's pretty cliché and most men don't tick all the cases but they all tick at least some of them
