If I have enough caffeine, I tend to be able to delay my panic and anxiety until I get home. Where I can cry in private.
If I do not have enough caffeine...well I have both been fired from and quit extremely good jobs just due to the emotional load that the pressure placed on me.
So over all, I don't really handle it well. I'm just far to soft and emotional to deal with that stuff for any serious amount of time.

it's not really a job description, more of a role that's a part of a job. In IT spesifically, it's who takes management responsibility for an ongoing incident (a service such as a website going down, a cyberattack, anything unexpected like that) and coordinates fixing it.
My old job especially used to involve a lot of it, I was doing shift work as an on-duty systems administrator, where the most important part of my job was noticing when things break, either from alerts or customer reports, and then reacting them, either by doing the fixing myself, or sending out notifications that something was wrong and calling the relevant people to come and fix things.

There's a guy on Youtube who makes post-mortem videos of IT incidents, and it gives good examples of the technical side of how these things happen. This video is a good example: https://www.youtube.com/watch?v=dsHyUgGMht0 though the things I worked with had at most like 1 million daily users, instead of the 100 million that Github does, so the scale is slightly different.
