Why would you want to be a fighter pilot in the digital age? Like once in a lifetime they might get to press a button and launch a missile at someone they can't see thirty miles away when they're not pressing the button that blows up an elementary school or a hospital (which is also too far away to see). It's practically an office job. They're not like fighter pilots in the 1910s to 1940s, knights of the sky who survived or died on luck, adrenaline and skill.

It has definitely become more digitized, but it's far from an office job.
For one thing, I've never had an office job where it's impossible to get up and use the shitter for 4-5 hours.
I've also never had an office job where fucking up could kill you (not even talking about the enemy, just fucking up a landing or a procedure).
It's also still extremely athletic, despite fly-by-wire, because just resisting the forces involved requires it. Heck, modern aerodynamic design means the aircraft is more than capable of shattering your bones against the console if the fly-by-wire wasn't limiting the G-forces.

And blowing shit up from 30 nm away is still cool as fuck. Can even be a little puzzle, trying to figure out what angle to send the munitions in so they don't blow up some apartment building in the way of the target.
