>>40589408Tinned copper is a whole other thing (I have some of those too). Pain in the ass to deal with. You can also get silvered pans where the interior is wiped with silver instead of tin, but in the same style. The silver is longer lasting and takes higher heat, but is of course more expensive. Pure .999 solid silver pan is the next extreme. Easiest to own if you aren't obsessed over having a mirror polish at all times.
But we were talking about stainless lined copper vs all clad's absurd "copper core" containing a thin layer of copper for $400. And of course for those, stainless lined copper wins.
