I am not American, but since leftists from your country consider themselves the centre of the world, I will answer in your terms:
The notions that these groups "weren't white" are highly dubious. Romans had referred to themselves as candidus since ancient days and Italians were later considered white by Arab and Turk slavers alongside the caste systems of the colonial Americas. The Irish, too, are literally the palest Europeans on earth with mixed Celtic, English and Norse heritage, and had two major waves of English conquest. These groups were mostly disliked for being Catholic, both by Cromwell and in the states. And yes, their assimilation basically did come from being less Irish, less Italian etc, aided by being visually similar to other Europeans - alongside Anglo-Americans losing power due to a culture of pluralism which put them at a disadvantage from nepotists like Jews, Indians etc.
Again, assimilation is predicated on the idea that other cultures become more tolerable by turning more monocultural. Which begs the question: what is bad with monoculture?
