The reason she paired harry with Ginny is that she wanted harry to have a massive loving family as a happy ending, in stark contrast to his time with the Dursleys after being orphaned. Ginny has a crush on Harry from the very first book so Rowling planned it from the start, Ginny wasn't a stand in beard for a Harry and Ron shipping. I would like to see what Ginny content Rowling had to cut from the books because she's supposed to be a fiery, strong willed, funny, popular, magically talented, super sexy red head that can naturally deal with all of the fame and danger that comes along with being the girl friend of The Boy Who Lived. Except that we don't really get to see much of it in the books and nearly zero of it in the films. In the books Rowling does way more telling than showing when it comes to Ginny. I think a better fan theory would have been Ron and Ginny being the Weasley twins, instead of Fred and George, and that would have made it easier for Harry and Ginny to have a developed romance and for Ginny's personality to actually show, but Rowling wanted her self insert, Hermione to be a main character, and making Ginny incredibly smart and studious, on top of being a star quidditch player, hot, tough, competent duelist, who is both witty and funny would have come off as Mary Sue or manic pixie dream girl material.
