So why was Socrates concerned with ethics so much? Why wasn't he just like all the other NPC greeks at the time who took these words for granted? Did he hit his head during the war? was he always like this? Did he un-npc Plato somehow or was Plato also born as a chosen

The vastly simplified answer is that Socrates took seriously the question "what is a philosopher," and found that 1) no philosopher could be an island unto themselves, and so needed to rely on the people around them for the things they wouldn't be able to get if they were committed to philosophizing, and 2) he reflected on whether the virtues contributed a philosopher's ability to philosophize, and whether the popular understanding of those virtues were true or not. E.g., how well can one philosophize if one is concerned with drinking or sex too often? So the practice of moderation (not to be confused with abstinence) is necessary.

>abstract philosophical debates for their own sake,

Before Socrates, philosophers were more like natural scientists looking for the mechanics of how the universe exists. Socrates is so notable because he said that morality and ethics have fundamental existence linked to this higher world.
