Zone One clearly aspires to be literary. The author later won a Pulitzer, but I'm not sure that his zombie novel really manages to say anything Romero's movies hadn't already said

Book of the Dead, Still Dead, and Mondo Zombie are a decent trilogy of zombie anthologies
