As far as Greek goes... Ancient and Modern Greek are totally different languages. It is probably not worth it to learn Ancient Greek in any conversational way. It may be better just to learn some terms.
I started German with an old version of the one linked below. I liked that it gave me a foundation in all of the sounds as the most fundamental baseline and worked out from there.
That’s just one example I liked and I don’t want to shill in particular however. With any language probably the best thing to do is have the patience to get a textbook and work along as if you were a high school student until you get to at least second or third year proficiency and then immerse yourself by reading/thinking/listening as best you can.
