I started with Man and His Symbols and it probably isn't the first one you should read if you're not already familiar with his concepts and terminology (I was totally in the dark about him prior to reading it) but it's what got me into Jung, so if you already have a basic grasp of his ideas and the vocabulary he uses (I forget which terms he explicitly defines in the text and which ones he just assumes you already know from his previous writing) and by basic I mean like you've at least watched maybe a quality 20 minute YouTube video about him and/or maybe read his page on Wikipedia, you don't need to be an expert already for that one like you do for a few of his works.
