"real" chicken tenders are made of the actual tenderloin of the chicken which is a little strip of meat under the breast connected to the breastbone that cant really be sold practically in any other dish past chicken tenders or being ground up with other scraps
feel like most unprocessed mass produced chicken tenders that are solid chicken arent tenderloin, like you said, with them just being strips of chicken breast
but to get "real" chicken tenders besides making them yourself you would most likely have to go to an actual non fast food restaurant that actually processes their own whole chickens with nothing to do with the tenderloins other than recouping food cost by selling them as kids menu items
