Humans, for the most part, rely on technology for fighting. There's firearms, which shoot small projectiles called "bullets" at extremely high velocities to kill the target by penetrating their skin, rupturing their organs, and causing massive amounts of internal bleeding. If a bullet penetrates your brain or heart, death is more or less guaranteed.
There's incendiary weapons, which shoot projectiles that explode upon impact, and sometimes light everything around them on fire. Grenades are the most common type. They're small bombs that can be thrown or fired from a launcher.
I assume you're familiar with tanks, because Rainbow Dash named her tortoise after one. Humans have those too.
Drone strikes are likely. These are autonomous flying machines that can fire both bullets and incendiary weapons.
There are also fighter jets, which are flying machines like drones, but bigger, faster, and piloted by a human seated inside of them. They are fast enough to breach the sound barrier several times over.
Missiles, which can be shot from drones, jets, or platforms, are long-range weapons that can be precisely aimed at a target from thousands of miles away. They have a velocity of hundreds of miles an hour, and a single missile strike's explosion is enough to demolish a small building.
Humans also have biological and chemical weapons, which they may or may not use because they violate international law. However, since you're not human, the law might not apply to you. These include poison gas, spreading disease (both natural and man-made), and exposure to carcinogenic and teratogenic substances. Very bad news.
There's also nuclear weapons. Humans will only used these if they feel they're forced to, but they're the most powerful weapons they have access to. The initial explosion alone is enough to destroy a small town and blind anyone looking at it, but they also irradiate the landscape for miles around and make it uninhabitable.

>Can they be reasoned with?Unlikely. A "peaceful" end to a war with a hypothetical conflict with humanity would result in your world being heavily exploited for resources, and Equestria becoming a puppet state of whatever country or countries has decided to invade.
>What should we do?Pre-emptive strikes would be ill-advised. Elements of Harmony would be borderline useless. If a war starts and humanity invades, I'd suggest having Celestia enter Earth through a portal, and have her use her abilities to make Earth's sun emit a solar flare directly at the planet. This will fry all of their electronics and send them back into the stone age, which should end the war relatively quickly.
