I'd also suggest going on Nexus and searching for tags like 'MLP' or whatnot, also just Googling it in a regular search engine, and maybe checking out peoples' playthroughs. Can help you find stuff.

Gardens of Equestria: This Coming Storm and its companion mod smugglers run is a dead project with only the prologue done. HOWEVER it changes all the billboards, posts drinks etc into their Fallout Equestria counterparts as well as a radio station. Sucks its dead though.
There is also Crimes Against the Mojave that adds pony races with an addon mod that adds pony companions. And as >>42372920 said look in the Nexus for pony and see what interests you.

Only mod I ever use besides the vlv required, is the one that adds Lil Macintosh from FoE. I think the zebra rifle is in that one too

I have a few New Vegas pony mods that got deleted from the nexus, they're on my main desktop somewhere, Twilight got to adventure from being born in the Fallout 3 bunker to the Battle of Hoover Dam, many years later...
