I thought it was because the song sounded like crap and they couldn't find a way to properly isolate John's vocals because it was recorded on a shitty cassette tape

Yeah that's the story as Paul tells it but Ringo and Paul didn't have the same concerns.
The tape they were using was a copy of a copy, and one of those recorders had an intense mains hum. That 1995 remake is out there on bootlegs, they applied an effect to John's voice so it sounded distant, so it largely worked in that respect but the orchestration used in it was over the top and I think that's why George didn't like it.
