Id say string size matters only if you want to have a specific sound for your personal playing style. It's a nice easy way to have get something sounding original and fresh

It depends on what tuning you are going for, what sound, what tone, and how bendy you like your higher strings. Or if you use a thicker kind of string, tune down and the action isn't super high, you get extra bend. It can make for a fatter and chunkier sludgy sound, like for doom metal. Thick strings are usually for heavier and lower tuning

11-48 for offsets, if not beefier. Otherwise they don’t play right or sound good. It’s a matter of stability more than preference.

There's also the thing where some bands use relatively thinner strings downtuned. It became a thing from Iommi having no choice but to use very light strings because of his finger accident (Master of Reality onwards being C# standard with 9-42 strings).You get that slight initial sharpness on the attack which can sound cool as well as bendyness.
In Kyuss I heard Josh Homme was using 10s in C standard as well.

im not much of a guitarist but i once accidentally bought some thick ass strings for my acoustic and for a while it legitimately hurt to play and felt much stiffer until i realised i need thinner strings and made much faster progress since then, so it does make a difference.
