start with the first album and go chronologically, she literally has no bad albums, some lesser ones sure but no stinkers, if you still want more there's demo versions of every album which are often better than the studio versions (I tend to prefer her with a rawer sound)

I think if you listen to PJ Harvey chronologically you'll get bored of it. Listen to the singles, then explore from there. The albums ... it can get a bit much one after the other,
