She was attracted to him because he interacted with one of her avant art installations where he sat down on a chair that was part of the installation and she thought he was clever and took her art seriously.
Bottom line is that both Paul and John were madly in love with their wives and the fact that both of them were women who had children from previous marriages proves that neither were shallow when it came to who they loved. Being able to "marry who they wanted" wasn't the point. They chose love instead of presumably Mick Jagger choosing the bird he liked shagging the most at the time, which is why he's had 5 marriages and 8 kids spread across marriages.
