Bell ringing is acceptable everywhere if you need to make your prescense known for safety. And unlike a freehub, you can just not use it if you can go around them safely. They will act surprised and look for the source of the sound, that is entirely expected and even desirable behaviour.
Loud freehub is also percieved as being shot with a gun. Except it's a minigun.

I hate the sound. my old bikes have a new shimano freewheel and an old Shimano 105 freehub, and both are silent. the freehub moreso.
if I need to pass someone, I have a bell on one bike but mostly I just say "I'm comin' around you!" and then the people understand that I'm going to pass them on the left, since I'm in North America.
saying "on your left" to a normie pedestrian just confuses them and they're just as likely to go left.
using your buzz saw sound effects is super gay. a freehub functions perfectly without the sound, getting a loud one to signal your presence just annoys everyone and signals that you're too autistic to actually interact with the general public.

I learned a while ago I need to be very careful passing people.

Yup, old shimano hubs are the best for quiet freehubs, and of course freewheels can be quiet if you use oil or grease.
Heck, you can quiet ratchet systems down with grease as well. DT swiss sells specific grease for that.

I have zipps too and I don't think they're that loud. they're a little louder than some generic garbage wheels I had back in the day on a cheap bike, they're about the same as my old mavics, and they are a hell of a lot quieter than chris bling. I have a 2019 era 105 freehub and I love it. It's not silent but it's super quiet.

I ride with a friendly sounding bell to not scare people. But I ride on the road so most of the time it's just to say hi to people I know

Instead half the pedestrian population is wearing noise-cancelling headphones and earbuds and won't even hear your bell over the sound of "Tyrone giving you and your wife's boyfriend a sensual massage ASMR".
Headphones are okay because at least you can see them and know in advance you have to be careful around someone who is effectively deaf. Noise cancelling buds are worse.
Though by far the worst are middle aged white women putting their hoods with faux-fur over their heads while using headphones, getting some triple dampening on any noise around them. These are the true menace, the ones who go EEEEP if you pass one meter away from them or more and will then complain about irresponsible cyclists snaking everyone on shared parts of the road.

get a bike stand and a drill stand, put the drill chuck against the wheel, ziptie the trigger on the drill and you get to hear the ratcheting sound all day long

I've heard nice things about shimano hubs but the rims are too narrow, the engagement angle is excessive, and the hubs on their own aren't exactly something you can just buy at any LBS, they need to step up their game if they want anyone outside of pro teams using their shit as an upgrade

Shimano hubs, excluding some higher en models, are quite silent, up to being almost stealthy. I just built a wheel on fh-m495 hub, costing $12, and it makes almost no sound.

Also, 95% of bike 'high end' is for old men to have a place to dump their money. An equivalent of cosmetics for women.

I don't know where (you) live but if it has no buffer areas or parts with ambiguous signing resulting with pedestrians on the bike path, then I really want to go there. No town where I've lived don't have at least a few spots like this where merging paths result in pedestrians being on a bike path that's crossing their area without markings, or shared crossings with unclear merging areas. It just happens.
That said, no, I will not show respect to the guy just sitting on the bike path waiting to cross the road instead of doing that at the light and zebra crossing 15 meters away. FUCK this guy. I WILL ring my bell, several time, and do some angry hand gestures as I pass him by.

How do you make them quieter? I had this old ass shimano 600 hub wheelset and it was nice and quiet, then I bought a pair of koozer rs1400 and these boyz are loud as hell. I dumped some thick grease into the hub, it helped for like 10 revolutions and then it went back to BZZZZZZZT.
