Bikes are at the mercy of how sticky tires are just like supercars, but also even if the tires get better 300+horsepower on a 400lb bike means it just flips over backwards if the tire hooks up. The street racing riders often spin tires up to about 150mph.
Now as far as cars getting faster all the time thats somewhat untrue: EVs and hypercars proved they cannot get much faster 0-100mph because of tires mostly. Nobody is putting drag radials on to drive around city streets on their supercar but EVs show all you need is a Tesla plaid and the only things besting it 0-60 are $3million hypercars.

Cars are faster now, but idc. I can get a super fast bike for $20k or $28k for top of the line. The value prospect is just too good. I can have multiple of different bikes. I just don't have the space to have 5 different cars of different types. I have the space for 5 bikes and already have 3.
