People care about performance. Tires can be upgraded, rigidity can be improved, suspension can be tuned, and so on and so forth. The only things that can't be substantially improved without literally getting a new car are the engine and curb weight.
Sure, engine swaps, FI kits, and tunes for stock FI setups exist but those always cost tens of thousands of dollars. Add the additional costs of having to upgrade the entire rest of your car to withstand any appreciable increase in power and the huge uptick in catastrophic reliability issues that come with modding engines and it's just not worth it.
Nobody in their right minds plans on getting a car that they think is underpowered out of the box. Except for GR86 owners I guess but they're just delusional. My guess is that the journos took the guy's statements out of context or he's just so far removed from the R&D segment of Ford that his beliefs in that regard don't actually matter.

What Mr. Lawler was saying is that the lack of interest over engines is because of the fact that car enthusiast culture is fading, and that modern car buyers aren't nerding out over engine statistics, zero to sixty times, top speeds, lateral Gs, ect, and just want a boring ass box to take them from point A to point B, caring more about figures like safety features, touchscreens and IT features, and fuel efficiency than anything fun.
Emissions and safety requirements are also making it really fucking difficult to be able to make a car fun AND economical.

The Zetec was used in Formula Ford and the 2.3 Ecoboost is widely used for swaps as well. The 3.0 Mondeo V6 was tuned by Porsche. Hell even the 2.7/3.0 Ecoboost V6s are sort of interesting just because of how they are put together.

Actually, it's because basically every engine now provides decent acceleration. Back in the day, shitbox engines were seriously bad and slow and getting a better engine made a substantial practical difference. So people largely don't really care because you can buy whatever and it'll breeze to 70 mph just fine. So the focus shifts to other things like infotainment. And of course the fact that cars were rather bare bones back then. They didn't have infotainment at all really. No adaptive cruise control etc.
