instead of seeing the brakes as something just to slow down the car, think of ways you can use them to shift weight towards where it's needed the most at a particular point in time.
if you need more grip on the front wheels to get through a turn for example, braking can shift the weight further towards the front of the car, over the wheels that need it the most at that point in time - up to a limit of course. Do it too much and the rear loses traction and you oversteer and spin out, or, if you're quick, you countersteer, recover, and complete pulling off a sick powerslide and hopefully people were watching all that.

this, it's just rev matching.

think about what happens when you downshift quickly. the engine revs have to be higher for the same road speed. the "basic" way to do it is to let out the clutch slowly, and the friction will accelerate the engine to the needed revs. but you can do this a bit faster by using the throttle to rev the engine, then let out the clutch much quicker as the speeds will already be matching. you need to do this if you're going to downshift very quickly in a manual.

Rev matching is part of heel-toe. He downshifts to get into the powerband, and rev matches the shift while also using his right foot to trail brake and weight shift into a drift alongside the added power from the downshift.
He rolled high dexterity low charisma at birth.

My Crown Victoria has a vacuum operated parking brake release, anytime the car is in drive, it's designed to release the pedal, however- and I am too cowardly to attempt this- that also means that at any time, I could Stomp the parking brake pedal to lock up the rear wheels and it wouldn't actually latch because the vacuum is holding it open!

Here kiddo, let me teach the technique of clutch-kicking mid-drift to keep the slide going.
In the corner after the time this should start at (4:40):

...He starts losing momentum in the slide, and starts understeering a bit, sorta like stalling a plane. Then if you look or listen closely at 4:45 he kicks the clutch 3 times in very quick succession while holding the throttle to get as much power back as possible to maintain the slide. It's a lot harder than roll racing on the highway.
And yeah, 4 cylinders sound like shit, get over it.
