dual clutch is near instant shifts, no worring about a clutch/needing skill to maneuver slowly, no need for a either a massively stiff clutch pedal or a clutch pedal with no feel

if you are going to spend 6 figures on modding a car, you generally don't settle for good enough

Its for faster shift times for going around a circuit track and eliminates mis-shifts. Thats the entire reason. Dual clutch has less to do with it than you think for holding power. Dual clutch is basically initiating the next upshift faster.

dual clutches aren't the "best" at holding big power but you're also not seeing those insane power numbers going around a track that often.

Nustangs because of the GT500 coming with a dual clutch, but most builds either swap out the MT82 for a built TR56M/TR6060 or build the 10R80 to hold the power.
Anyone running a 2000+HP viper is either running a dogbox 6 speed or a sequential, not a dual clutch. Afaik no one even makes a kit to put a dual clutch in a viper.

Yes, there is a limit to how much you can reliably moderate the power with a clutch pedal. I'm sure you could handle high power with the right coordination, but the more HP you have, the more likely you are to burn out the clutch or do unintended burnouts on the daily.
There's a reason why drag cars use slushboxes over manual and DCT
