Remember, ICE isn't here to find evidence to present in a criminal court so that he can be tried by a jury for crimes he may have committed in other countries. That's for the police to do, if the person in question commits a crime here in the US (like, for example, Kilmar Abrego, who WAS deported but now that the police found evidence he was a full-time human and drug trafficker, he will be brought to trial here in the US and face prison time here). But if it's just ICE, they're picking the person up, verifying that they're illegal, and shipping them out. No convictions needed.
