There was widescale flooding at the end of the younger dryas. Early civilizations would have passed these legends down by word-of-mouth. Written language hadn't been invented yet.
Many religions with ancient roots have aspects that are blended and conflated with other ancient religions because they often found it was easier to "retcon" new pieces into a multi-compatible religious story rather than try and eradicate that society/religion completely.

After dinosaurs died, during the Ice Age, there were giant glaciers. When these super glaciers melted, it caused flooding. It wasn't necessarily covering the entire planet in water, but it was WASHING WATER over all of Earth's lower-elevation landmasses.
It would have seems like a planetary flood to humans on the ground. They had no technology to see the bigger picture

Whatever made the rings around Saturn would have equatorial rings around Earth that would light up like a raimbow when backlit at night.

I think this is a better explanation than Saturn's rings touching Earth BUT someone really building a seaworthy boat inland and saving his family and all the animals. A wooden boat of that size would fall to pieces. It would need untold tons of nails and tar too and still break up under its own weight. The cosmological explanation of an arc from a planet travelling behind rings also left by the flood I think fits better.

Saturn's rings have been shown to be ordinary water since spectral analysis in the 1960s. No sample yet confirming them to be literally salty sea water but IMO they would be.
