Why is it acceptable for the Japanese to refer to foreigners as "gaijin" but I'm evil for referring to gentiles as "goyim"?

It's not. That's why you hear Japanese say the politically correct term "gaikokujin" now because Japanese easily submit to censorship. Sometimes even that is considered too offensive and they say "kaigai no hito" instead.
