The way I see it (I'm not Greek) is that it's not ethnophyletism any more than it is to say that the Church began in Jerusalem. Does that mean Jerusalem Orthodox Christians are the best? Obviously not. But considering the Eastern Roman Empire was the center of the Church when it was finally allowed to flourish, that just so happens to be where a lot comes from. But the Church (the Head of which is Christ, remember) saw fit to unify the practice across all the Orthodox into one Divine Liturgy.
